Grandma Peterson’s Cheesecake

Crust Layer 

Ingredients 

  • 1-¼ cup of ground graham cracker (see note 1) 
  • ¼ cup of white sugar 
  • ¼ cup of melted butter 

Preheat oven to 350°. Mix all dry ingredients. Melt the butter and add to the premixed dry ingredients. Pack crust ingredients into a cheesecake spring pan or a glass baking pan. Bake for 5-7 minutes. Remove from oven and let stand for a minimum of 5 minutes. 

Middle Layer 

Ingredients 

  • 2 large eggs or 3 medium eggs 
  • 2 large packs of cream cheese 
  • ¼ cup of white sugar 
  • ¼ tsp of vanilla extract (see note 2) 

Mix all ingredients together and pour on top of crust layer. Bake at 350° for 20 minutes. Remove from oven and let stand for 15 minutes covered. 

The Topping 

Ingredients 

  • 1 pint of sour cream 
  • ¼ cup of white sugar 
  • ¼ tsp of vanilla extract (see note 2) 

Preheat oven to 400°. Mix all ingredients together and spread on the middle layer. Bake for 10 minutes. Remove from oven and cover. Let fully cool covered before serving. (see note 3) 

Notes: 

  1. Graham crackers can be substituted with other cookies. Nilla wafers, shortbread cookies are some examples. 
  1. You can substitute vanilla with other extract flavors. 
  1. You can add fruit, jam, or jellies before adding the top layer.
